Forkfuls of Flavor
This book offers inspirational and heartfelt messages to those who have survived a serious illness. An award-winning public relations professional and founder of CarusoPR, Ellyn Caruso uses her personal experience and recovery to inspire others to never give up on life. As I share my thoughts on these ninety amazing, mouthwatering recipes, the focus stays on clean, anti-inflammatory Mediterranean dishes, fitness habits, and learning how to be a survivor. While skimming the book, I noticed that every dish is presented in full color so readers can envision the foods in each major category—including seafood, poultry (my favorite), vegetables, pasta, and much more. I quickly spotted so many recipes that I would love to try.
Chapters & Highlights
The Mediterranean Flavor of Life & Thrivers Cook Up the Flavors of Life: The opening will bring both tears and smiles. “The Power of Everyday Choices” defines the Mediterranean way of life and shares how the author and her husband travel to experience the peaceful rhythm of the region. It also covers “What You Eat Really Matters” and “A Thriver’s Tips to Fast and Easy,” sharing fellow survivor Joan Eschbach Rowan’s belief that no matter how busy you are working full-time or running a business, it is vital to cook wholesome meals at home.
Becoming a Culinary-Curious Cook: Offers actionable steps to transform how you shop, eat, and cook, including how to stock a Mediterranean pantry. It also features Mary Jo in “A Thriver Who Loves Cooking,” along with step-by-step preparation photos and her delicious recipe for Toasted Orzo with spinach, sun-dried tomatoes, olives, and Parmesan.
Seafood: Breaks down the myths of cooking and shopping for seafood, detailing fish types, textures, tastes, nutritional highlights, healthier cooking methods, and kitchen notes. Although I cannot eat seafood, if I could, I would choose the Pistachio-Crusted Salmon, Sole Provençal, or the delicious-looking Halibut.
Poultry: One of my favorite sections, featuring standout choices like Mediterranean-Style Chicken Paillard and Lemon Parmesan Chicken & Roasted Vegetables.
Vegetable Mains & Beef, Pork, and Lamb: Filled with a wide variety of hearty, wholesome options so readers can easily find their personal favorites.
Pasta & Grains: Another personal favorite of mine, highlighting dishes like Chicken Pasta Primavera, Salmon & Spinach Lasagna (the best!), and Fluffy Veggie Brown Rice Pilaf.
Sides & Salads: A wonderful collection of side dishes followed by the salads section—which is my absolute favorite, as I love every single one of them.
Menus & Helpful Resources: The book rounds out with sample menus to help plan your meals, Kitchen Conversion Charts, Acknowledgments, References and Suggested Further Reading, About the Author, and the Index.
With so many fantastic recipes to choose from, this is one cookbook that will inspire you to embrace Mediterranean-inspired dishes and truly understand the author’s journey.
